Day 15 of the 24 beer of Christmas is Feathers and Frost, a Saison, from Brewer’s Kitchen in Chicago, Illinois. Saison used to be one of my favorite styles. I sought them out as the category is huge, especially when you include adjuncts and wild yeast. It is almost limitless, leaving interpretation open to the brewer. What a great category to fiddle within.
Feathers and Frost surpassed my expectations. The darkness leads one to believe this will be a heavy beer but the illusion is well played. The botanicals add simple complexity while the dark malts were probably a late mash addition just for the color. I would have this again. Enjoy!
